Most of India across its diverse income levels and occupations was pushed to transition to digitalisation a while ago. Truly keeping up with the changing times, even the tiniest of the vendors and shops smoothly moved on to e-transactions. Cards and wallets are accepted almost everywhere and it is slowly making transactions easier in general.
Talking about keeping up with changing times, my vegetable vendor created a WhatsApp group few months ago and since then, each morning, along with my morning cuppa some Balinese coffee and good morning messages, I am served with pictures of attractively arranged display of the fresh fruits and veggies that are on offer for the day. This guy accepts all modes of non-cash payments– Cheques, Cards, Wallets, NEFT and the works. He takes orders on WhatsApp and delivers them for a small price.
So, you get the freshest and the best with all the conveniences thrown in. What more would I want every other day than a bowl of fresh fruits and veggies drizzled with honey, lime and olive oil on a crunchy bed of lettuce.
What’s even better is that this guy stocks even the unconventional, the exotic and the global… and I enjoy my weekly veggies shopping trip his booth.
One such occasion, I picked up some really fresh and juicy looking zucchini. I used them to make some crispy Zucchini Chips that served as a lovely accompaniment to a Risotto meal.
To get going with the chips we need –
Mid 2 -3 midsized zucchini
2tbsp Rice flour
1 ½ tsp garlic powder
1 ½ tsp Mixed Italian seasoning
2 tbsp Cheddar Cheese powder
4tbsp Olive oil
Salt & Pepper to taste
Cut the zucchini into thin slices and set aside.
Beat the eggs. Add salt, pepper, 1 tsp garlic powder, 1 tsp Italian seasoning and half of the cheese powder. Mix thoroughly.
Mix remaining cheese powder, garlic powder and Italian seasoning with the rice flour in a shallow plate.
Heat a grill griddle and drizzle some olive oil. Take the zucchini slices one at a time, dip it nicely into the egg mixture, roll into the rice flour mixture to coat each slice evenly and place on the hot griddle. Flip and shallow fry till both the sides are golden brown and crisp.
Remove from the griddle and serve hot with Salsa or Hot n Sweet sauce.
We can replace eggs with corn flour paste if desired but the result would be equally amazing…
These chips are an amazing accompaniment to a Garden Salad Bowl too. It serves as an equally good evening snack or as one of the components on your Starters platter…
