I get back home late from work, the cook has decided to take the day off and I am no mood to cook. Ordering out doesn’t fancy me, because you really cannot go too far with an order out…. Pizza, burger and fries, subs, Chinese or rolls and that’s where it practically ends…. Not interested… seriously.
I want to have something yummy which is also quick, easy and filling….
I browse through the contents of my fridge nonchalantly… I find a packet of frozen chicken nuggets, some fruits n veggies and a mix salad bag… And I suddenly get a brainwave to toss a totally quirky unconventional salad; mixing and matching some of the stuff from the refrigerator.
And this joy ride of a mix n match resulted in a yummy and superfast Fruit n Cottage cheese salad with Grilled Chicken nuggets
To get going, you would need
For the salad,
200 gm of mixed Salad leaves – Iceberg lettuce, Red butterhead, Romana, Arugula leaves; roughly torn
250 gm pack of Chicken nuggets, (grilled on a skillet with a little oil drizzled and then each cut into 4)
½ cup apple cut in cubes
½ cup raw veggies cut in cubes (green peppers, black olives & carrot)
200 gm of Cottage cheese cut into cubes
2 tbsp pomegranate seeds
Salt to taste
1 tsp Pepper
2-3 tbsp Vinegar Salad Dessing
For the Salad dressing, you would need
5 tbsp Extra Virgin Olive oil
Juice of 1 lemon
1 tsp Dried Italian seasoning
½ tsp garlic powder
1/2 tsp Vinegar
1 tbsp Honey
Salt and Pepper to taste
For the salad dressing, whisk together all the ingredients in a bowl to make a smooth creamy blend.
Take all the salad ingredients except the chicken nuggets in a large mixing bowl, add the salad dressing and toss well. Place in a salad bowl and top it with the Chicken nugget chunks. Your quick fix super yummm salad is ready to be gorged on…
