Think multi course meal and I paint a picture of an elaborate 7-course meal with exquisite china and sparkling silvers, dainty table mats and elegant tableware. Some experience definitely! And to have it all laid out on an exquisite long ebony dining table with subtle lighting from dainty chandeliers and be served by impeccably dressed attendants. Such a dreamy, heady picture!
Cut in to reality, a one course meal or a single pot meal or a casserole has become the order of the day for me. Weekends I manage a slightly larger spread and a cosy 3-course meal enjoyed with family and friends, and that’s something we all look forward to.
But there are many a days, when anything elaborate or multi ingredient doesn’t fit into the busy schedule, and that is when some versatile, quick cook foods come to your help!
A stem veggie that is my big time saviour on many days, which I can twist and turn and make into some marvellous dishes, a veggie so versatile that it makes many a delectable main course, one which works wonder as an accompaniment to most main courses, a beloved part of so many breakfasts and a super duper hit amongst kids..
Their preparations come in all forms….. baked, roasted, fries, mashed, stir fried, boiled…. And they are yummm in each of these forms! A veggie that merges itself into any cuisine and has the capacity to create the most delicious accompaniments in the main course….. Boy! Who doesn’t love to eat their potatoes!!!
On one occasion while I was onto creating a salad, soup and garlic toast meal, this time tested accompaniment exceptionally enhanced the culinary quotient of the meal….. The stir fried Garlic n Herb Wedges…
Here is a quick run through of the recipe for you guys of a dish that gets ready ready in minutes and taste yummmmmm….
To get going you need,
250gm Potatoes peeled and cut into wedges
5-6 cloves of garlic, minced
2 green chillies, finely chopped
2 tsp dried mixed Italian Herbs
3-4 tbsp Olive Oil
2 tsp finely chopped fresh basil leaves
Salt to taste
¼ tsp Pepper
Heat the oil in a shallow frying pan, add garlic and chillies and sauté well. Add the Italian seasoning and potato wedges and cook them tossing regularly till they are lightly brown and crispy. Add basil salt and pepper and mix well.
Garnish with some fresh chopped coriander if you like and its ready to serve!
You can serve the dish by itself or with a dip of your choice. My kids love to have theirs with coleslaw or tomato ketchup.
Have them with a meal or just as an evening snack or as starters….
This is one dish I find to be simple, tasty and full of vibrancy… anytime, anywhere…
